You know what my favorite kinds of desserts are? (Other than ones that someone else makes and brings to my house so I don’t have to actually do anything) Ones that are easy, delicious, and are born out of random afternoon cravings. The less time and ingredients it takes, the better (and faster it makes it to my mouth).
A few weeks ago, our itty bitty town grocery store was selling pumpkin whip in the deli, and I picked up a small container for Ben, who promptly got three bites out of it because I hogged it all. I don’t even really like pumpkin pie – but this? WAS AMAZING. I could have eaten my weight in the stuff.
Unfortunately, the grocery store hasn’t had my new beloved dessert since, so I’ve been trying to figure out how to make it on my own. After two attempts at two different recipes – one that I winged on my own and the second where I followed an actual recipe – I have been happily eating pumpkin for days and am even more happily surprised to find out that Ben prefers my wing-it version to the recipe.
The best part is, my version is easy:
- 15 minutes (or less, if you’re not stopping every 30 seconds for photos)
- Only THREE ingredients, that you may already have at home
- And is conveniently the perfect color combo for Halloween.
This is what we call a dessert win, my friends.
Ingredients
- Oreo cookies (about 20-25)
- 2 Containers of Cool Whip (Light/Sugar Free varieties work great too)
- 30oz can of pumpkin pie mix
Instructions
- In a food processor, pulse cookies until crumbled. Set aside.
- Combine pumpkin pie mix and 1 container of Cool Whip in a large bowl; mix well.
- Place layers of cookie crumble, pumpkin mixture, and second container of whipped topping in a trifle or individual serving dishes. Finish with Cool Whip and remaining cookie crumbles around the outside edge. Garnish with extra Oreos or dark chocolate (optional).




This is soooooo badddd and sooo good at the same time. I need to do this at my lil candy party. I like!
